The Seahorse: the restaurant and its recipes

Recipes for everyone's repertoire, and a great read...
I've been aware of The Seahorse since it opened and tales of piscine treasures began to creep out - but Dartmouth isn't entirely local to me, so I just kept abreast of their news from a distance. This month however Mitch and Matt were doing a pop-up at Nathan Outlaw's London outpost, so it seemed as though *fortuna* herself had intervened. Last night we dined on raw prawns, tiny shrimp, garlic laden potenta, spaghetti con sepia, amazing monkfish, and a completely delicious olive oil cake! This morning I ordered a ton more cuttlefish ink, because that's a dish I'm going to be making for weeks - all of it was powerfully flavoured, yet somehow light and balanced... These dishes are in the new Seahorse book, and ought to be in everyone's repertoire. As well as delicious recipes, there are lots of details about suppliers, the people who inspired the dishes, and local specialities - it's a great read!Friends and Places; I Bologna, Barbera and Tartuffo; Fish; Meat; Wines; Olive Oil; Salt; Morning Fire; FireAntipasti: Parmigiano Gran Reserva with aged vinegar; gnocchi fret; peperoncini arrosto; celery and bottarga. liver crostini; insalata di mare; calamari fritti; mussels in escabeche; mussels and aioli; focaccia; anchoide; sprats or archives with garlic and olive oil; carcioffi fruity; baccala fritti; fried sandwich of polenta; Fontina and truffle; Piedmontse peppers; melanzane al forno; cicerello fritti; fried squid with lemon thyme and garlicTo StartPasta and RiceTo FollowSide DishesDessertsStocks and SaucesIndex

A absolutely brilliant book that captures the essence of straight foward
A absolutely brilliant book that captures the essence of straight foward, ingredient led cooking. As a chef it's refreshing to see a restaurant book that celebrates the joy of serving well cooked grub over some ego fest splattered with plates garnished to high heaven. The only real obstacle about this book though is you have to have access to awesome produce to cook the recipes.Dishes of this nature require freshness!Still,it provides you with the excuse to score "The Good Stuff" and enjoy some truly wonderful food.Buy this book!
